Tuam – A  Fine Dining Pop-Up Restaurant

TUAM was a one-day fine dining pop-up restaurant in a historic pre-partition home in the walled city of Lahore, developed as part of Design Summit 01. It grew out of a course I taught, Gastropoetics and Gastropolitics in Artistic Practice, and was built collaboratively with my students over two weeks, transforming an abandoned space into a functioning restaurant using limited resources. Every element was considered: interior, crockery, lighting, menu, branding, and kitchen setup. The menu offered a fine dining take on traditional street food. The project was developed in collaboration with the British Council and Communal Hub, and included workshops for young people from underprivileged backgrounds on running a restaurant with limited means. On the day, the restaurant broke even and was received well by the community.
